This brunch dish from Stables of Como is one of the best things I've eaten all year. These pictures are from a brunch we had quite a few months ago, and the menu does seem to change quite regularly, but luckily the rumbled eggs have stayed.
Grilled crumpets are topped with creamy creamy eggs and a generous sprinkling of truffled pecorino - the truffle flavour is present, but not overpowering. Crisp batons of pancetta and chives complete the dish. It is generous and indulgent, but also well balanced. So delicious!!

EDIT: After reading Lorraine's comment below, I just had to Google - apparently "rumbled eggs" is a 19th century term for scrambled eggs, and are made by cooking beaten eggs, cream or milk, butter and a little water, either in a saucepan or in a double boiler.

Ooh that looks great! What does rumbled mean though? Is it different from scrambled? Because if it's a new technique I'd love to know it! :D

ReplyDeleteI've also seen scrambled eggs at Stables of Como and they look different, golden folds of egg as opposed to the creamy pile of eggs here. :)
It's delectable! This would be perfect for breakfast! And I got to know something something about "rumbled eggs" :)
ReplyDeleteI bought truffle pecorino recently and was looking for some good recipes. Just made this sandwich on toasted white sourdough bread and effect was spectacular. I did not expect much cos i was bored of breakfast eggs in general, but it was absolutely delicious. That slight touch of truffle pecorino was a game changer and turned ordinary scrambled eggs into very posh breakfast full of flavors. Can't wait for my breakfast tomorrow :) Yummy!
