The sour cream had been used for nachos, and we were meant to eat the bananas but didn't get around to it. (Which itself is adapted, I'm told, from the banana cake in Rose Levy Burnbaum's \u003Ci\u003EBaking Bible\u003C\/i\u003E). In previous incarnations, I've always eaten the cake topped or filled with extra things - choc chips, a cream cheese filling, a peanut butter and cream cheese frosting (!) - but the cake itself is really lovely. I simplified it even further this time by just mashing the bananas with a fork and whisking the eggs and sour cream in. If you've already opened the carton of sour cream for the batter, you may as well use it for the glaze too. This is another awesome technique\/idea\/recipe that I learned from the amazing Nat Paull. It's incredibly simple but so delicious - just whisk together a little sour cream and some icing sugar and pour over your completed cake. I've made it a bunch of times and in different variations, and I think it's really seeped in to my subconscious now; it's not an icing I need to be prompted to make or for which I need to consult the recipe. (You'll remember I used a version of it for my \u003Ca href=\"https:\/\/www.sarahcooks.com.au\/2020\/07\/petite-passionfruit-loaf-cake-with-sour.html\"\u003Epetite passionfruit loaf cake\u003C\/a\u003E). If you don't have a bundt tin of the same size - firstly, I suggest you buy one because they're so cute - or use a different shaped tin with a similar capacity. Brush the inside of a 16cm bundt tin all over with melted butter to form a thin and even layer. (Alternatively, you can use cooking spray). Sift in some plain flour, rotating the tin to cover the insides with a thin and even layer of flour. (You want to try and avoid any gaps). Tap the tin over the sink to dislodge any excess flour.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EMash the bananas in a mixing bowl and whisk in the sour cream and egg.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EAdd the vanilla extract, caster sugar and melted butter and whisk to combine.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003ESieve in the flour, baking powder, bicarb and salt and whisk to combine.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EPour the batter into the prepared tin. Bake for 30 minutes, or until cooked when tested with a skewer.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EAllow to cool in the tin on a rack for 15-20 minutes. Gently pull the cake from the edges of the pan with your fingers. Place a cake rack on top, then (wearing oven mitts), flip the cake and rack over. Tap the tin firmly to help dislodge the cake, then gently lift the cake pan away. Y'all know I love sour cream in cakes - not only does it add richness and moisture, but the boost in lactose gives a flavourful browning in the crust. So good! I love cream cheese icing on banana cake, but this shape of bundt is a little difficult to ice attractively, and also I had a brick of cream cheese in the fridge that needed using up. Brush the inside of the tin all over with melted butter to form a thin and even layer. Sift in some plain flour, rotating the tin to cover the insides with a thin and even layer of flour. (You want to try and avoid any gaps). Tap the tin over the sink to dislodge any excess flour.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EPlace the bananas, sour cream and eggs in a large mixing bowl and blend together with a stand mixer.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EAdd the vanilla extract, caster sugar and oil and whisk to combine.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003ESieve in the flour, baking powder, bicarbonate of soda, cinnamon and salt. Whisk gently until smoothly combined.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003EPour three quarters of the batter into the prepared pan.\u003C\/div\u003E\u003Cdiv style=\"text-align: justify;\"\u003ESoften the cream cheese in the microwave for 30 seconds or so, then beat with a wooden spoon to soften further. Spoon the cream cheese into the tin. Enter these pancakes!\u003Cbr \/\u003E\u003Cbr \/\u003EI've had the idea of cottage cheese pancakes lurking in the back of my mind for a while -\u0026nbsp;\u003Ca href=\"http:\/\/www.sbs.com.au\/food\/recipes\/russian-sweet-cheese-fritters-syrniki\"\u003Esyrniki\u003C\/a\u003E and blintzes have been on my to-do list forever - but I've also been meaning to make the healthy kind, the type that seems to keep popping up on health and fitness blogs, made with eggs, oats and cottage cheese. As I said above, I always have those ingredients on hand, and on this particular morning, I also had an overripe banana in the kitchen that had been staring at me disapprovingly for a few days. In addition to the bananas, oats, cottage cheese and egg, these pancakes have a little cinnamon and vanilla for flavour, plus a little baking powder for lift. I fried them in butter because butter is life! I made a couple of slight changes, using both brown and white sugar instead of just white, and topping it with a mixture of cinnamon and caster sugar for extra crunch and the lovely comforting aroma. I was surprised to see a few trend-driven recipes in there - Momofuku-style pork buns, kimchi tacos, 2-ingredient Nutella brownies, avocado toast, and chia pudding, anybody? - but having followed Nigella for ages, I know that nothing would make it into her book if she didn't absolutely love it and think it was worth making. It is so delicious! I loved it on crunchy toast, and I did try Nigella's suggestion of using it as a dressing for cold noodles, which was lovely as well. If you follow Nigella on \u003Ca href=\"http:\/\/www.instagram.com\/nigellalawson\"\u003EInstagram\u003C\/a\u003E you'll see that she makes this salad (or variations thereof) very often. The mackerel fillets are baked at a high heat in a kinda teriyaki-style glaze. If you do make this, you should definitely try the fabulous stir-fried brussels sprouts that Nigella suggests. They're dipped in a mustardy-eggy mixture and cornflake crumbs before being fried, making them tender, tasty and super crunchy. A real winner! Mix in the egg-and-oil mixture, followed by the mashed bananas. Finally, stir in the peanut butter chips.\u003Cbr \/\u003EHalf fill the indentations in the loaf tray with the mixture. Spoon a teaspoon of peanut butter into each mini-loaf, then top with the remaining mixture.
