They should be double their size before you put them into the steamer. Wipe the water on the lid before you cover the bao zi 'cos the water will drip onto the bao zi to make it soggy.

SteviaAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-8787347.post-36405353986017157812013-06-24T15:33:30.441+10:002013-06-24T15:33:30.441+10:00Hey great website! I can repay kindness in smiles and cheesy humour. Anyway, my favourite dish is the "Yu Xiang Qie Zhi" aka "Fish Smell Eggplants", then there's one with the chinese chives fried with beancurds, "Ma Yi Shang Shu" aka "Ants Up the Hill" (the glass vermicilli dish) and of course the "Shui Zhu Yu" aka "Water Boiled Fish". Sichuan dishes sure have some interesting names, huh? I had to laugh at your quote "With their subtle Oriental flavouring, there seems no end to the imaginative recipes the Chinese can conjure up with poultry" Baahaa! I've tried making a couple of Sichuan dishes at home - I've made dan-dan sauce (this is usually mixed with noodles but I put it on congee, haha) and I've made spicy eggplant.leaf (the indolent cook)https://www.blogger.com/profile/02265240462060082738noreply@blogger.com
