Peanut Butter Granola

Guys, guys! I made peanut butter granola! It was super easy, and the most delicious thing ever! I hadn't made granola in ages - I generally find it takes me ages to get through a batch, and I have a couple of big boxes from Germany that I've been working through.

However, one day I was idly scrolling through Pinterest, and this peanut butter granola from JoyFoodSunshine caught my eye. Such big crunchy oat clusters! Only six ingredients! Peanut butter as the primary flavouring ingredient! Just get in my belly already! I insist that you make it as soon as possible.

Ingredients

JoyFoodSunshine's recipe suggests you use natural peanut butter (i.e. the fancy unemulsified kind from the health food aisle - I went in the total opposite direction and used Reese's peanut butter. (I have some natural peanut butter at home, but it's quite thick, and I didn't think it would melt enough to coat the oats). Also, Reese's is delicious.

This granola is really easy - just melt the peanut butter and honey together...

... add some vanilla, then stir this aromatic mixture through the oats and other dry ingredients.

And then you bake it! You need to stir it halfway through baking, so that it browns evenly. Try not to stir it too vigorously though - you want to keep the large clusters rather than break them up.

I like that this is a plain granola, without heaps of distraction - it's all about the peanut buttery crunchy clusters!

Although having said that, being a plain granola, it's a great base for add-ins like dried fruit, chocolate, extra nuts and so on when you're in the mood. Rather than making a full batch of this granola with the add-ins, I've been adding a small amount of different add-ins each time I eat it. I get bored easily, and this way it's kinda like having a different granola every day!

I also like the classic addition of sultanas, for a fruit and nut vibe.

Peanut Butter Granola
Recipe from JoyFoodSunshine

Ingredients
2 cups rolled oats
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup peanut butter
1/4 cup honey
1/2 teaspoon vanilla
Optional mix-ins: roasted salted peanuts, sultanas, finely chopped dark chocolate or chocolate chips
Method
Preheat oven to 160C. Line a baking tray with baking paper.
In a mixing bowl, stir together the oats, cinnamon and salt.
In a microwave safe bowl, mix together the peanut butter and honey. Microwave in 30 second bursts and stir until smooth. Add the vanilla and stir.
Pour the peanut butter mix into the oat mixture and mix well.
Spread the mixture into the baking tray. Bake for 20-25 minutes, or until lightly golden brown. Stir once halfway through baking, but try not to break up the clumps as much as I did!
Remove the tray from the oven and allow the granola to cool completely. (N.B. it will harden and crisp up as it cools).
Store in an airtight jar.
Eat as is, or stir in a few spoonfuls of your favourite mix-ins as you serve.

  3. Oh, I'd love to try that ... ah, I'm definitely trying that. I only have to find a spot in my schedule. I am going to save it for that.
