Happy Birthday Jordy! (White Chocolate Cupcakes with White Chocolate Frosting)

It was my friend Jordy's birthday last week, and she celebrated with dinner - a curry feast - at her house.

My contribution to the party was a batch of white chocolate cupcakes with white chocolate frosting, from The Buttercup Bake Shop Cookbook. The cake is a pretty standard white cake mixture, with a touch of melted white chocolate added. I decided to add an extra cup of white chocolate chips, because white chocolate is the most delicious thing on the planet. The recipe is supposed to make 24 cupcakes, but I got 36 cupcakes out of the mixture by filling the muffin-tins only 3/4 of the way. I recommend doing it this way, so that your cake mixture goes further, and so you get a higher icing-to-cake ratio in the finished product.

As for the icing, it's a case of melting butter in a pan, then adding sugar and evaporated milk and boiling it. Next you add vanilla extract and cornflour, and a heck of a lot of white chocolate. Once it's all melted and combined, you let it cool, and then refrigerate it until thick. The recipe says this takes about an hour, but after this time, the icing was still disappointingly runny. However, I found that an extra hour of fridge time plus a good 10 minutes whipping with a hand-held electric mixer made it sufficiently thick. I don't think you'll ever get the frostily stiff and swirly peaks of the normal Magnolia/Buttercup icing (8 cups of icing sugar to 1 cup of butter!!), but I hardly think that's a problem, because the white chocolate version tastes so much better!

I made these cupcakes on Friday afternoon, and the party was on Saturday night. Jordy is a great cook, and serious about her food, so I knew that there'd be a lot to eat, and that it'd all be good. I find Indian curries to be very filling, so I made sure I was super-hungry when I arrived so that I could sample everything. This plan paid off.

These cupcakes are fabulicious, and are the best that I've tried so far from the Magnolia Bakery / Buttercup Bake Shop cookbooks.
